They had forgotten to go in and edit the offerings, and neither of them like beets. So we were gifted with the beets which my husband and I both like.<\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\">I hadn\u2019t tried it before, so I decided to roast the beets. I trimmed the ends, peeled the beets with a vegetable peeler, and cut them into about 1-inch chunks.<\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Peeling%25252520beets%2525255B10%2525255D.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" alt=\"Peeling beets\" border=\"0\" src=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Peeling%25252520beets_thumb%2525255B7%2525255D.jpg?resize=500%2C333&#038;ssl=1\" height=\"333\" style=\"background-image: none; border: 0px currentColor; display: inline; padding-left: 0px; padding-right: 0px; padding-top: 0px;\" title=\"Peeling beets\" width=\"500\" \/><\/a><\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\">I melted coconut oil and tossed the cubed beets with the oil. <\/div>\n<div style=\"text-align: center;\">I seasoned the beets with salt, pepper, and cinnamon.<\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Seasoing%25252520Beets%2525255B10%2525255D.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" alt=\"Seasoing Beets\" border=\"0\" src=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Seasoing%25252520Beets_thumb%2525255B7%2525255D.jpg?resize=500%2C333&#038;ssl=1\" height=\"333\" style=\"background-image: none; border: 0px currentColor; display: inline; padding-left: 0px; padding-right: 0px; padding-top: 0px;\" title=\"Seasoing Beets\" width=\"500\" \/><\/a><\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\">I placed the seasoned beets on a cookie sheet covered with parchment. <\/div>\n<div style=\"text-align: center;\">I roasted them in a 400 degree oven for 35 minutes until they were fork-tender.<\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Beets%25252520on%25252520Parchment%2525255B10%2525255D.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" alt=\"Beets on Parchment\" border=\"0\" src=\"https:\/\/i0.wp.com\/myheart4home.com\/wp-content\/uploads\/2014\/05\/Beets%25252520on%25252520Parchment_thumb%2525255B7%2525255D.jpg?resize=500%2C333&#038;ssl=1\" height=\"333\" style=\"background-image: none; border: 0px currentColor; display: inline; padding-left: 0px; padding-right: 0px; padding-top: 0px;\" title=\"Beets on Parchment\" width=\"500\" \/><\/a><\/div>\n<div style=\"text-align: center;\">&nbsp;<\/div>\n<div style=\"text-align: center;\">While the beets were roasting, I took frozen raspberries and microwaved them for about a minute so they were thawed and warm.
