We have lived in the Seattle area for over thirty years, and while we have seen<\/div>\n
most of the major tourist attractions we have not ventured into the many neighborhoods<\/div>\n
\u00a0that offer street markets, tastes of international culture, and more.<\/div>\n
<\/div>\n
So today when we decided to go to a farmer\u2019s market, we decided to venture out a little<\/div>\n
\u00a0and go into Seattle to the Ballard Farmer\u2019s Market. The Ballard area is known for its<\/div>\n
Scandinavian heritage and culture.<\/div>\n
<\/div>\n
<\/div>\n

The weather was absolutely gorgeous for wandering through the market.<\/div>\n
We found a little bit of everything: bakery vendors, organic meats and produce,<\/div>\n
small vintner wines, flower stands and street performers.<\/div>\n
<\/div>\n

<\/p>\n

What caught my interest was the beautiful fresh berries that had been picked<\/div>\n
from the farm this morning. I got a half flat of berries \u2013 3 boxes of raspberries<\/div>\n
and their last 3 boxes of boysenberries.<\/div>\n
<\/div>\n
When we got home, I prepped the berries for the jam recipes that I will be sharing later this week.<\/div>\n
Part of preparing the boysenberries is putting them through the food mill<\/div>\n
so that the pulp is part of the jam but without the huge seeds.<\/div>\n

<\/div>\n
I love berries and don\u2019t like to waste any of them so instead of just tossing the seeds<\/div>\n
along with the pulp and skins still clinging to them I decided to make a batch of Berry Shrub.<\/div>\n
<\/div>\n
Shrub is a tangy, sweet drink from colonial days made with vinegar and sugar.<\/div>\n
Most people look a little puzzled when I tell them it has vinegar in it but it makes<\/div>\n
a very refreshing beverage on hot summer days.<\/div>\n
<\/div>\n
Since I discovered it years ago, my family anticipates its production each year.<\/div>\n
I am enjoying a glass as I create this post.<\/div>\n

Here is my recipe:<\/div>\n
<\/div>\n
Fresh berries or peeled and chopped fresh fruit<\/i><\/div>\n
White vinegar, white wine vinegar or red wine vinegar <\/i><\/div>\n
Sugar<\/i><\/div>\n
\u00a0<\/i><\/div>\n
Place berries in a saucepan and just cover them with vinegar\u00a0<\/i><\/div>\n
(with boysenberries\u00a0<\/i>I used red wine vinegar, with raspberries and strawberries<\/i><\/div>\n
\u00a0I would use white or white wine vinegar).\u00a0<\/i><\/div>\n
\u00a0<\/i><\/div>\n
Bring them to a boil and boil for about 5 minutes until most of the color\u00a0<\/i><\/div>\n
(and flavor) has been cooked out of the fruit and infused into the vinegar.\u00a0<\/i><\/div>\n
\u00a0<\/i><\/div>\n
Strain the vinegar through a colander lined with cheese cloth.\u00a0<\/i><\/div>\n
(You don\u2019t want a cloudy liquid.) After the vinegar has been strained,\u00a0<\/i><\/div>\n
measure it and return it to the pan.\u00a0<\/i><\/div>\n
\u00a0<\/i><\/div>\n
For each cup of vinegar, add one cup of sugar to the pan.\u00a0<\/i><\/div>\n
Bring to a boil and reduce to simmer, cooking until all the sugar is dissolved.<\/i><\/div>\n
\u00a0<\/i><\/div>\n
At this point you can put the shrub in a jar and refrigerate, or put it into sterilized jars,\u00a0<\/i><\/div>\n
put on canning lids (that have been softened in hot water) and rings,\u00a0<\/i><\/div>\n
and process in a water bath canner for 10 minutes to seal.<\/i><\/div>\n
\u00a0<\/i><\/div>\n
To serve the shrub: Pour about 1\/4 cup of shrub into a glass of ice and\u00a0<\/i><\/div>\n
then fill the glass with club soda or lemon-lime soda. Adjust the amount of shrub to taste.\u00a0<\/i><\/div>\n
I have one son that likes it tart so he mixes it about 50\/50 with the soda.<\/i><\/div>\n
\u00a0<\/i><\/div>\n
I hope you will try this refreshing drink. I have made it with berries, peaches, and rhubarb.<\/div>\n
My family has like them all.<\/div>\n
