The last day before the holiday and I’m happy to say that all of my family will be home for Thanksgiving dinner as well as my hubby’s parents. It will be nice to have the family together.
My daughter-in-love and I have been making lefse together since she joined the family. We have a routine that allows us to get a batch done in a very short time. I included the recipe in yesterday’s post. I roll it out, she cooks it on the griddle, we cool it, and store it in a zip locked bag in the refrigerator.
After the lefse was done, we made our pies: pumpkin and brown sugar peach. I am usually a “from scratch” baker but for pies I think Pillsbury makes crust just as good as mine. My sweet granddaughter pulled a chair up to the counter and announced she was going to help with the pies. She helped roll out the pie crusts for the peach pie and used a cookie cutter to cut butterflies out of the top crust. Of course, she also had to taste the pie filling after I emptied it into the crust. The pie filling is my homemade Brown Sugar Peach Pie Filling.
My daughter-in-love mixed up the pumpkin pie filling per the recipe on the can which made enough filling for two pies but we were only making one. So Nora made a little pie for herself, and the rest went into a buttered dish so we could have pumpkin pudding for dessert tonight. It was very yummy! Tomorrow we will whip the heavy whipping cream to top the pies.
All of the pre-holiday cooking is done, the bathrooms are clean, the guest rooms and blow up mattresses are ready. Let the holidays begin!
We’ll start the day tomorrow with cinnamon rolls and the Macy’s Thanksgiving Day Parade, and have Sausage & Kale soup for lunch. Through out the day the rest of the food will get prepared, and we will continue our tradition of the children (in this case Nora and her uncles) making fresh butter in a mason jar, the table will be set, and the family will gather for a great meal. We will record our thankfulness on the tablecloth, and share our thankfulness for the many blessings God has provided this year.
